While I have cut back a little from doing my #FaithStephanieProject I certainly haven’t stopped meal prepping each week. I am still going through the Healthy Meal Prepping cookbook and taking the recipes and transforming them into my own in order to reach my own goals. Here I am focusing on plenty of vegetables and turning over into more plant-based recipes and lower calorie recipes to create a weight loss deficit for myself. That said, I still want to share with you what I am cooking each week. Here you go!

Healthy Meal Prepping Week January 21-27

As you know I create 3 different recipes with 4 meals each for a total of 12 meals. Among these meals I usually have a couple of snacks a day involving fruit and yogurt mostly.

The first recipe I have is for my Meal 1, or lunch, Tofu Nuggets with a Spinach Salad and Cherry Tomatoes. Yummy! I love tofu nuggets because they are very easy and taste like mozzarella cheese sticks to me.

My Meal 2, one of my dinners, is a Tofu Stir Fry with vegetables such as broccoli, peppers, cherry tomatoes, carrots, peas, green beans, and corn. This meal offers protein from the tofu and a variety of minerals, nutrients, and carbs from the assortment of vegetables. That’s one thing I adore about a stir fry is that there is a large variety of vegetables.

For Meal 3, another dinner option, I used Italian sausage for this broccoli, pepper, and mushroom stir fry. These week has two stir fry meals but with different vegetables and different proteins.

All of the meals are delicious, light but feeling, and very nutritious. My snacks included Greek yogurt with blackberries, grapes, and apples. I also had air popped popcorn as an option, but I haven’t tore into the bag yet!
